A breakthrough

This weekend I was determined to run outside I haven't done this more than a handful of times but I live right behind a college track field and a quarter of a mile away or less is the gate.  I tried to jog to the gate and barely made it as it is all hills around my house.  The field was still covered in some snow and water from it melting but I thought what better way to measure than 4 times around is one mile. So I started not sure exactly what pace I was running at. At 1.5 miles I always get a block and this time was no different I took it one lap at a time and next thing I know I'm at 11 excited to finish My run I realized I wasn't tired at all so I thought what's one more mile?  So then I was on lap 15 and again I thought what one more mile then I was on 19 and thought might as well do a 10k!  Well at 22 laps I got kicked off the field because they had soccer practice but I mapped out the route to and from the field and it was a 10k afterall!  Woot! And I felt incredible!

The softest chocolate chip cookies ever

I have been making these for years. My favorite tried and true recipe! It seems lately I have been making these at least once a week or so. So i thought i would put the recipe on here to share and a few photo directions. Who knows this could become a daily thing when i make food since i seem to experiment a lot with dinner and such.

Preheat oven to 375






I like to use a mixer it makes things much easier!


Gather Up your ingredients. You will need Margarine, white sugar, brown sugar, 1 egg, flour, baking soda, salt and chocolate chips.

Mix Dry ingredients together






Soften Margarine in the microwave.... don't use butter instead i have tried this and they do not taste right at all


Mix in the wet ingredients till thoroughly mixed





Mix in the chocolate chips you might have to set it on a higher speed to get them to the center of the dough

Shape into balls and place 12 balls on a bakers sheet. Do not try this on a thin metal cookie sheet they will burn on the bottom and not come out soft at all. You can pick up these Bakers sheets and any kitchen store or warehouse club.


Careful your family will be in stealing cookie dough as soon as they hear the mixer stop

Set your timer for 12-14 minutes i usually end up with 12 because i like my cookies super soft

They look a little puffy when you pull them out and they are a little brown around the edges but they will soon loose the puffy and look like a normal cookie.




After a minute or so take them off the baking sheet with a spatula and put them on a cooling rack to cool down. As you can see not all 12 of the cookies made it there





I guess i should give you the recipe for them so you can try your family will LOVE these cookies and since i'm being kind enough to share the recipe you can at least give it a try :)

1 Cup margarine or 2 sticks
3/4 cups White sugar
3/4 cups Packed brown sugar
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1 egg
1 cup chocolate chips

mix as directed above
375 for 12-14 minutes

Piper's doctors appointment

After our little freak out on Sunday over Pipers breathing. I took her to her doctors appointment on Wednesday. She has gained 7 ounces in the last 7 days and is now 10 pounds 9 ounces and 22 inches long. The doctor informed me that Piper has reflux and thats why when she is laying down she has problems breathing. Then they gave her 4 shots and she did not like that at all when i finally got her calmed down we went to schedule her next appointment and the nurse who gave her her shot was in the waiting room and when Piper heard her voice she started screaming again. The poor nurse felt so bad she said she'd leave. It was kind of funny that Piper remembered the ladies voice.
